Wheat semolina, dates, clarified butter, pistachio. Named, sourced, and unchanged where changing them would change the product.
The mould
Maamoul is pressed, not shaped. The crimp on the top of every piece comes from a carved mould, and it is the reason two maamoul from different houses never look alike.
